The monograph offers a reconstruction, from a legal and policy perspective, of the evolution of the Internet and the implications of selling food products online from businesses to consumers. It begins with a historical reconstruction of the use of e-commerce and its evolution, which is fundamental to fostering a critical understanding of the rapidly changing business models, adoptions, and their implications. It primarily focuses on the peculiarities of food that influence the number of consumers when sold online, which is lower compared to other food products. Why so? Why is consumers’ trust lower when dealing with food products, and how could the trust be enhanced?
